If you’re a fan of chicken, turkey and other lean, healthy meats, then rabbit should be right up your alley. Once you get past images of Thumper and Bugs Bunny, rabbit is unbelievably tasty! We do it up quite a few different ways around here, but one of our favorites is on the grill.
Take your rabbit and lay him out flat. Then, take some of our Touchdown Chicken (salt-free) seasoning and sprinkle it on liberally. If you don’t have a bottle of our Touchdown Chicken, it’s a mixture of chili powder, black pepper, curry powder, cumin, garlic powder, paprika and a couple other special, secret ingredients for sweetness and flavor.
Get your grill going on high heat and put the rabbit flesh side down for 5 minutes. This will give the skin and meat a nice crust and sear. Flip the whole dude over and back the heat down to low and go fix some side dishes, cut up some cucumber, play a game of H-O-R-S-E with your kids and then check on the rabbit. Actually, check on it 10 minutes after you flip him and turn the heat down, and every couple minutes after that until he’s done. Just like with chicken or turkey, rabbit will be done when the juices run clear.
Take the rabbit off the grill and let it rest for 5 minutes before cutting off the legs and slicing up the meat. If he hasn’t been de-boned, watch out for the rib bones.
This will be some of the best meat you ever eat!
